Pure Lavender Honey Ganache and Lavender Honey filling

Ingredients:
- half cup brown sugar
- cup Lavender Honey
- half cup heavy cream
- 4 tbsp. butter
- half teaspoon vanilla extract
- teaspoon salt
- 1cup dark chocolate for melting.
Method:
- Heat sugar and honey in large pot on medium heat and allow the mixture to dissolve and deepen in colour.
- In separate pan heat a heavy cream over medium heat until it comes to a simmer and then add butter.
- Add to honey/sugar mixture and stir until combined.
- Remove from heat and add vanilla extract and salt and mix quickly (leave in the room temperature to cool down).
- Divide dark chocolate in 3 similar portions.
- Melt first portion and fill your chocolate moulds just to cover it walls and little bit on the bottom.
- Put it to the fridge and repeat this process once chocolate has hardened.
- After second layer when chocolate has hardened, fill it up with delicious Lavender Honey or Lavender Honey Ganache and cover with remaining melted chocolate.
- Use pastry spatula to level up with mould and remove excessive chocolate and for one last time send to the fridge.
- Let it set and remove from moulds.
Useful tip: keep your mould on firm board.
